So lately I’ve been obsessed with making my own burritos and quesadillas at home. I love Chipotle and after awhile it can get crazy expensive, so I thought it would be perfect to make my own. Lately, I’ve been trying to get into the meal prep lifestyle of eating healthy and this I thought, would be a great start and practice for me. The ingredients are super easy, super cheap at the grocery store and you can prepare this under 30 minutes! Here’s what you’ll need:
- Wheat tortillas
- Organic chicken breasts/tenders
- Black/pinto beans
- Brown rice
- Any other ingredients of your choice
The first thing I do is season my chicken breasts and bake them. Afterwards, I dice them up. I sometimes will fry them just a little with cooking spray just so the chicken has a bit of a crunch (This is great for the quesadilla.) Then I boil all the rice I’d like for the week, warm up all my beans and store all my ingredients in containers. Of course, you can add whatever ingredients your hearts desire. I love making this as a quick snack or meal. So good! Hope you’ve enjoyed & happy holidays!
